Abstract :
Fresh Bun is a popular dish in Viet Nam and many countries around the world. There are many delicious dishes made from fresh Fresh Bun, such as crab vermicelli soup, Hue beef noodle soup,.... The research team has developed a mini noodle-making machine to facilitate the production of Fresh Bun in restaurants, hotels, and large eateries,... Within the scope of this article, we have simulated the powder flow velocity in the mold as a basis for adding additional powder extrusion holes on the mold surface. On that basis, we compare the energy efficiency in the production of fresh rice noodles using two extrusion mold with different numbers of holes on the same noodle-making machine. The results indicate that energy efficiency increases 18,5% when using a die with more holes.
